Head Brewer (Full Time)

Over the past eight years, we’ve built a strong local identity, a dependable core portfolio, and a growing distribution presence across North Carolina, with plans for continued regional growth. Our portfolio balances a set of flagship beers with a rotating and seasonal programming focused on quality of execution and thoughtful innovation. We are committed to continuous improvement in process, draft quality, sensory evaluation, and production consistency as we scale.
We are seeking a Head Brewer who can maintain consistency in our established brands while helping shape the next phase of Tobacco Wood’s operational and creative growth.

The Head Brewer will lead all brewing operations and work closely with ownership and the Commercial Operations Manager to guide production quality, operational consistency, and brewery culture.
This role is ideal for a technically strong brewer who values process discipline, team leadership, and thoughtful portfolio development. The Head Brewer will have meaningful input on recipe strategy, production systems, quality standards, staffing and long-term brewery direction.
Responsibilities
• Maintain consistency and integrity of the core lineup across increasing production volumes
• Develop and execute rotating, seasonal, and limited-release recipes
• Oversee fermentation management, water chemistry, yeast health, and CIP/sanitation protocols
• Lead sensory evaluation and continuous quality improvement efforts
• Manage packaging operations including kegging, canning/bottling, and draft quality control
• Coordinate production scheduling and inventory planning with the Commercial Operations Manager
• Hire, train, and manage brewing and cellar staff
• Maintain accurate batch records, quality logs, and TTB compliance documentation
• Perform and oversee routine equipment maintenance and troubleshooting
• Manage ingredient inventory, vendor relationships, and purchasing coordination
• Ensure compliance with all TTB, NC ABC, and workplace safety requirements
• Contribute to operational systems, SOP development, and brewery process improvement initiatives -
Requirements:
• 21+ years of age
• 5+ years professional brewing experience, including leadership responsibility in a production environment
• Proven ability to maintain recipe consistency at scale
• Strong technical knowledge of fermentation, water chemistry, yeast management, sanitation, and process control
• Hands-on experience operating and troubleshooting 15–30 BBL brewing systems
• Experience with packaging line operations and draft quality management
• Proficiency with brewery management software (currently Breww and Brewer’s Friend)
• Strong organizational and recordkeeping skills including batch records, tax and TTB filings, and quality documentation
• Experience working in a distribution-focused brewery environment
• Ability to regularly lift 55+ lbs, stand for extended shifts, and work in hot, cold, and wet conditions
Preferred:
• Familiarity with the North Carolina beer market and ABC regulations
• Experience balancing flagship production with rotating/seasonal portfolio management
• Barrel-aging, specialty adjunct, or mixed-fermentation experience
• Demonstrated leadership in building brewery culture and training staff -

Buck ‘n Doe Brewery (Yadkinville, NC)
Consultant/Brewer (Contract Position)
Posted May 29, 2026 | Buck ‘n Doe Brewery is a new Brewpub by Muddy River Tavern with a small (four 5 bbl fermenters, one 5 bbl Brite tank, 3 bbl mush, kettle, and whirlpool, 7 bbl HLT ) microbrewery. Everything is in place, ready to go. We are looking for someone with prior experience to get everything up and brewing.
